Lasagna Soup - A Family Favorite

Before I share with you my new weekly feature I want to thank the ladies at Natural Nesters for choosing my Family Binder post as one of their favorites from their recent link party last week. I'm very honored to be chosen. Be sure to visit them for me and share some love. 

Now for my new weekly feature. I'm so excited to be able to share with you some of our favorite family recipes. Since I organized my cookbooks and recipes a few weeks ago, (What's for Dinner? Now I Know!) I can now bring to you some of our favorite dishes. 
My first recipe to share with you is for Lasagna Soup. This is a favorite with my family, our Confirmation students and many of our friends. My youth ministry volunteers ask me to make it for every dinner meeting we have. I was given the recipe several years ago by a wonderful lady from our church. She has since passed away so making this soup always brings back special memories of her. 


Here is what you need:
1 lb of ground beef  - I have also used ground turkey
1/2 c chopped onion
1 pkg Lasagna dinner mix (Hamburger Helper is the one I use most)
5 c water
1 can (141/2 oz) diced tomatoes, undrained
1 can (7 oz) whole kernel corn, undrained
2 T grated Parmesan cheese
1 small zucchini, chopped

Here is what you do:
In a dutch oven or soup kettle cook beef and onion until meat is no longer pink, drain.
Add contents of lasagna dinner sauce mix, water, tomatoes, corn and Parmesan cheese. bring to a boil. 
Reduce heat, cover and simmer for 10 minutes, stirring occasionally. Add the lasagna noodles and zucchini. Cover and simmer for 10 minutes or until noodles are tender.
Serve and enjoy!
