If we could we'd eat them everyday



Today I'm sharing each of our favorite family recipes. The meals we can never get enough of.

Jim's favorite meal is Stuffed Bell Peppers - I was given the recipe from his sister and so far over the years I have been able to duplicate pretty well.

For this recipe you need:
6 med bell peppers
1 lb ground beef
1/3 chopped onion
1/2 tsp. salt
Dash of pepper
1 1lb can tomatoes
1/2 cup water
1/2 cup raw rice
1 tsp Worcestershire sauce
1 cup shredded cheddar cheese

Cut off tops of peppers and remove the seed and membranes. Precook peppers in boiling salted water for 5 minutes. Drain and sprinkle inside the cups generously with salt. Cook meat and onion til brown. Season with salt and pepper. Add tomatoes, water, rice and Worcestershire sauce. Cover and simmer until rice is tender (15 minutes) Stir in cheese. Stuff peppers, stand upright in a baking dish. Bake uncovered at 350 degrees for 20 -25 minutes.

My favorite meal has always been my Grandmother's Spaghetti. It's so simple it's funny and you can find the recipe right at the store. It's on the back of the McCormick packet.
Since Grandma's recipe is so simple, I'm going to share another of my favorites that involves more cooking techniques and more ingredients. It's called California Tamale Pie. I'm not sure where this recipe originally came from. It is probably my mom.
For this recipe you will need:
1 onion, chopped
1 Tbl olive oil
1 green pepper, seeded and chopped
1 clove of garlic, minced
1 lb of ground beef
2 8oz cans tomato sauce
1 c. cornmeal
1 12oz can whole kernel corn, drained
1 can pitted olives 8.5 oz
2 cups milk
1 tsp. salt
1 tsp. chili powder
Saute' onion, green pepper and garlic in oil until limp. Add ground beef stirring until meat is brown and crumbly. Pour in tomato sauce, corn, olives and milk. Heat and then gradually stir in cornmeal. Season with salt, chili powder. Bake in a greased 3 quart casserole covered (325 degrees for 1 hour) uncover and continue baking 30 minutes. Serves 8 to 10.

Jacob's favorite meal is actually a recipe from one of my Campbell's soup cookbook. It's called Shortcut Stroganoff
You will need:
1 Tbs vegetable oil
1 lb boneless beef sirloin strips
1 can Campbell's Cream of Mushroom Soup
1 can Campbell's Condensed Beef Broth
1 cup water
2 tsp Worcestershire sauce
3 cups uncooked corkscrew pasta
1/2 cup sour cream
Heat oil in skillet. Add beef and cook until browned and juices evaporate stirring often. Add soup, broth, water, Worcestershire and pasta. Heat to a boil. Cover over medium heat 15 minutes or until done, stirring. Add sour cream. Heat through. Serves 4

Alex really doesn't have a favorite yet. Well actually her favorite seems to be whatever Jim, Jacob or I happen to be eating. She is always begging for food even after she has had a whole meal. We are very blessed that she is a great eater.
